ブルドッグの起源は「ブル・バイティング（牛いじめ）」という、13世紀にイギリスで人気を博していたスポーツにあります。「ブル・バイティング」でのブルドッグの役割は、牛を攻撃して興奮させ、荒れ狂わせることでした。牛の鼻に噛み付き、いったん食らい付いたら放さない、それがブルドッグの仕事だったのです。

「ブル・バイティング」は、大衆の娯楽として人気を集めていただけでなく、普通に屠殺される牛よりも、ブル・バイティング後に屠殺される牛の方が肉の味がよいという理由でも支持されていたようです。また、ブルドッグは、娯楽としてクマをいじめる「ベア・バイティング」にも使われていました。

ブルドッグのオーナーたちは、自分の犬が持つ獰猛さと不屈の精神に誇りを感じながら、いったん噛み付いたら何があっても絶対に放さないブルドッグのパワーをさまざまな方法で実証していました。ところが、1835年に「ブル・バイティング」が禁止されることとなり、ブルドッグは歴史の転換期を迎えることになりました。
